Meal Spotlight: Avocado Toast

I wrote this post weeks ago, but for some reason never posted it. I've been majorly slacking. While I'm no longer into eating it as often, I was completely obsessed with this meal/snack for a while, so it certainly deserves a post of its own!

I didn't experience cravings during my last pregnancy. So far, this pregnancy has been filled with random cravings and aversions that come on without warning. In the last couple weeks, I haven't been able to stop eating avocados. The nutritionist in me always looking for the reason for the craving. I'm guessing that my body needs the (good) fat from avocado.

My avocado breakfast, lunch, snack of choice has been the exact same for two weeks. I've been eating it once a day and loving every minute of it. It's quick and easy to prepare, but is also packs a nutritional punch.

I start with sprouted grain bread, toasted. Spread a touch of Sir Kensington's chipotle mayo on it. Add 2 pieces of very sharp cheddar, sliced avocado and a generous sprinkle of hemp hearts.

Hemp hearts are small, soft "seeds" that have a mild flavour. They are awesome….

  • They're a great source of plant protein (add them to toast, smoothies, yogurt, salads)
  • They're also an excellent source of Omega-3 and Omega-6 fats. 
  • Great fibre source, which will keep blood sugar stable and help with digestion
  • Good source of minerals, including iron, magnesium, phosphorus and zinc. 

The girls almost always want to try whatever I'm eating, especially if it's something new. Quinn ended up asking for her own. Excuse the poor food photography. It's definitely not my strong point.


I've also replaced the cheddar with some fresh cherry tomatoes, That was equally delicious!
